Small Town USA "Pioneer Day" Parade

Hi, I'm back. Thanks for checking in on me.
It has been crazy busy at my end of the world.
With the end of school and four kids, life is fast and furious.
During a visit of our Th. Fost. Ch. sisters visit, we had a cookout. It was fun!!

Nuthouse

Hi,

OMG, it's a true nut-house here! Todd and I are doing respite th. fos. care this weekend. Two more kids, plus our two th. fos. kids, plus our own two kids...two plus two plus two equals SIX!! It is a nut-house!! Crazy crazy crazy. Hope to upload some pics tomorrow. Watch and see please.

Zesty chicken tortilla bake recipe

Zesty Chicken Tortilla Bake

Prep 25 min. Total 50 min. Makes 8 services, 2 roll-ups each.

What you need:

1/2 cup Miracle Whip Dressing
1/2 cup flour
3 cups milk
1 pkg. (8oz.) chredded cheddar cheese, divided
1 1/2 lb. boneless, skinless chicken breats, cooked, cut into bite-size pieces (any chicken will do)
1/2 cup Thick Chunky Salsa
1/2 cup chopped fresh parsley
16 flour tortillas (6 inch)

Make it:

Heat oven to 375 degrees F

Mix dressing and flour in medium saucepan with whisk until well bleneded. Gradulally stir in milk. Bring to boil on medium heat, stirring constantly; cook and stir until thickened. Add 1 cup cheese; cook until melted, stirring constantly. Reserve 1 cup sauce.

Stir chicken, salsa and parsley into remaining sauce; spoon 1/3 cup down center of each tortilla. Roll up. Place 8 roll-ups seam-sides down in each of 2 (13x9-inch) baking dished sprayed with cooking spray; top with reserved sacue and remaining cheese.

Bake 25 min. or until heated through.

We served on the side with refried beans, rice, and chips!

Yum!!

Easy to make and not to expensive. Family loved it!

New recipe for supper---yum

chicken tortilla bake
refried beans with sour creme
cheap butter rice (no mexican rice to be found in cupboard)
More chicken tortilla bake
Ready to eat, served with chips too.

This is a new recipe I tried for supper tonight. Called Chicken Tortilla Bake. It was yummy!!
